Beef Wellington

This is my way of making this wonderful Christmas Dinner.  I follow a mixed recipe from Jamie Oliver and Gordon Ramsay. Each has a unique way they prepare this dish. I chose to combine the best of both versions to create my own. Enjoy

Beef Wellington is a preparation of fillet steak coated with pâté (often pâté de foie gras) and duxelles, which is then wrapped in parma ham and puff pastry, then baked. Some recipes include wrapping the coated meat in a crêpe to retain the moisture and prevent it from making the pastry soggy.

Preparing the mushroom and chestnut mix.
First layer prosciutto, mushroom and Beef. Wrapped up and placed in the fridge for 30 minutes.
Puff Pastry to pack the Wellington in.
Can be made the day before and then put in the refrigerator.
Bake at 200 degrees celsius for about 30 – 35 minutes
Served with a Balsamico black sauce and Hasselback potatoes. Enjoy

Walmart Bus Stop and Transport to “First Light”

We arrived around 5pm on Saturday, December 7th. To our surprise the parking lot was full, so we had to drive to the local Walmart and wait in line to catch a bus to the event. We were not alone…..

We were presented with a Indigenous Area. We were treated to a drumming and singing by John Somosi in the Longhouse.

At 7pm we were treated with a Fireworks show. Truely a hightlight of our visit.

Veal Marsala

Veal Marsala is a classic dish you’ll find in many Italian restaurants, and it’s a dish that’s super easy to make at home. Marsala wine and a little lemon juice add excellent flavor to this veal and mushrooms. It’s a very easy recipe and preparation is a breeze.

My first attempt at this amazing Italian specialty. It was so easy and yet so delicious.

  • All-Purpose flour to cover plate
  • Kosher salt (to taste)
  • Black pepper (to taste)
  • 3 cloves garlic finely chopped
  • 1/2 Onion finely chopped
  • 1 to 1 1/2 pounds veal cutlets (thin)
  • Olive oil, cover pan bottom
  • 2 cups (lots) mushrooms (sliced)
  • 1/2 cup Marsala wine (sweet or dry)
  • Served with fettuccine

Veal pre-cooked in olive oil
Garlic and onions finely chopped
Mushrooms chpped and cooked in same olive oil
Marsala was added and cooked for a few minutes
Then the veal was added
Finished and served on a heated platter
Naturally served with a bottle of Chianti
